A personal look into our Catering Department with VP Chris B. A collection of memories in no particular order.
Going the Distance
For ten years, we proudly catered the Kohler Family Picnic in Sheboygan, Wisconsin—serving more than 7,500 guests over a single July weekend, nearly 1,000 miles from home.
How did we do it? The same way we cater here in South Carolina: by sourcing local meats and ingredients, bringing our own equipment, and delivering an unforgettable guest experience. On-site in Wisconsin, we grilled burgers and hot dogs, smoked brats, pork, and chicken, baked sides, and chopped fresh produce. It is a massive production—and one we genuinely enjoy.
Over the years, we built strong relationships with the local community and cherish seeing familiar faces year after year. We’ve taken this same approach to large-scale company picnics across the country, including events in Hattiesburg, MS; Fort Wayne, IN; Atlanta, GA; Richmond and Dublin, VA; Fayetteville, NC; Jacksonville, FL; and Auburn and Dothan, AL.
We’d love to add your town to that list. We receive requests daily to bring Maurice’s BBQ all over the country.

The Big Apple
Maurice’s has been catering since at least the 1960s, when catering to the soldiers & families at Fort Jackson - Columbia, SC. Growing up, I heard stories of my Uncle Paul catering events at the USC Coliseum and working alongside Joe Pinner, a beloved local figure known for his charitable work.
My first personal catering experience came at just 10 years old—in New York City. My grandfather, mother, and I traveled to Manhattan to take part in a Meals on Wheels charity event at Rockefeller Plaza, serving our World Famous Pulled Pork and BBQ Sauce to crowds of attendees.
While my role was mostly ceremonial (Grandpa referred to me as the “Chief of Security”), the catering team of the 1990s handled the real work. That trip left a lasting impression and helped spark my lifelong connection to catering.

Weddings, Weddings, Weddings
Weddings can be a stressful time for couples and their families—but food service is one thing you shouldn’t have to worry about. With hundreds of wedding receptions and rehearsal dinners catered, our team has refined the process into an art.
Wedding planners often dress up our food stations with flowers and décor, but the BBQ is always a standout talking point for guests. Over the years, we’ve catered weddings at some incredible locations:
• On the beach at Folly Beach
• In the mountains of Hendersonville and North Georgia
• At venues with 1600 Pennsylvania Avenue in the background (yes—we’ve catered in our nation’s capital multiple times)
• At Lake Murray, the State Museum, the Governor’s Mansion, and countless local venues, homes, and churches
Every wedding is unique, and we remind ourselves before each event that this is someone’s once-in-a-lifetime day. Our goal is always the same: exceptional food and a positive, memorable experience.

Military
Between Fort Jackson, Shaw Air Force Base, and Marine Corps Air Station Beaufort, we’ve recently served over a ton (2,000 pounds) of pork to our military community.
From hangar events to full-scale air shows with tens of thousands of attendees, it’s an honor to serve those who serve our country. Catering on a hot, open tarmac isn’t easy, but it’s a challenge we welcome every time.
These events require extensive planning, paperwork, and perseverance—but the reward is building lasting relationships and giving back to those who sacrifice so much.

Baseball and Barbecue
For more than a decade, we’ve provided catering and barbecue services to the Augusta GreenJackets, a partnership that’s especially meaningful to me. I was born in Augusta, GA, and lived there for my first seven years. As a lifelong baseball player and fan, these events are personal.
I still remember helping with a catering event at Lake Olmstead, bringing along my wife and our one-year-old son. Today, whenever you enjoy a pulled pork sandwich or BBQ nachos at a GreenJackets game—or with the Spartanburgers—you’re enjoying a Maurice’s Catering product.
We’re proud to bring a taste of Columbia BBQ to the region and to support local baseball programs, including Lexington, Chapin, and BC High Schools, the Lexington County Blowfish, and the Dixie Youth World Series when it’s hosted locally.

Holiday & Christmas Parties
Who throws a massive Christmas party for their clients every year? Mr. Rick does.
A longtime fan of our barbecue and an incredibly kind individual, Mr. Rick has hosted this annual holiday celebration for years at the State Museum. When his nephew first reached out to us many years ago, the company was still handling the event on their own—no small task for a growing business feeding and entertaining hundreds of guests.
As their client base grew into the thousands, they made one call and trusted us to take it from there.
Mr. Rick had just a few guiding priorities for the event:
1. Fun, engaging entertainment for both kids and parents
2. A visit from Santa for photos and holiday memories
3. Food that was exceptional—and never ran out
Executing this event is no small undertaking. The State Museum is a large, multi-level venue, and we operate within a tight 90-minute setup window. To ensure smooth service, we build three separate food and beverage buffet stations throughout the building, allowing guests to flow comfortably while enjoying the event.
Attendance is always unpredictable—sometimes 1,000 guests, sometimes closer to 2,000—but preparation is key. Our team plans for every scenario so no guest ever feels the impact of the unknown.
The result is a seamless, festive experience that allows our client to focus on what matters most: celebrating the season with their guests.

University of South Carolina
I graduated from the University of South Carolina in 2007 with a double major in Marketing and Management and a minor in Education. USC is also where I met my wife, who was attending the Darla Moore School of Business at the time and has been incredibly supportive throughout my career. While still in college, I managed several of our restaurant locations in my “spare” time—experience that helped shape my understanding of both operations and leadership.
After graduation, I moved into our grocery store initiatives and eventually into catering. It didn’t take long for me to want to connect our catering efforts back to my alma mater.
Over the years, we’ve had the privilege of serving the USC Swim Team and their summer camps, as well as catering a wide range of events across both the Columbia and Aiken campuses. From late-night sorority and fraternity events to formals, parties, and campus gatherings, each event brings something unique.
Many of these experiences have taken us to iconic locations around downtown Columbia—from the old Tapps building, to Washington Place off Main Street, the Columbia Museum of Art, the State Museum, and numerous venues both on and off campus.
We’ve also had opportunities to cater events connected to Gamecock Football, including a particularly special occasion with Coach Spurrier and his wife, Jeri, whose handwritten thank-you note meant more than she likely realized. Some of my favorite memories go back even further—attending a game with my grandfather and mother to meet Coach Brad Scott and receiving a signed baseball from Coach Ray Tanner from the team’s World Series championship year.
While we’re proud to have catered events at Clemson University, The Citadel, Emory University, Wofford, and Augusta State University, there’s no denying that home is where the heart is. The University of South Carolina and the Columbia community will always hold a special place for us.

Grocery Stores
Before stepping fully into leading the Catering Department, my goal was to bring our BBQ sauces back into grocery stores. I traveled to Chicago, Austin, Miami, Atlanta, and Washington, DC, working with personal contacts, brokers, and the South Carolina Department of Agriculture.
It was an honor to see our sauce back on shelves in major markets. However, with the sauce category becoming increasingly oversaturated and margins shrinking, the focus shifted. I was given the opportunity to rebuild and grow the catering department.
As the saying goes—when one door closes, another opens. While you can still find our sauces in many grocery stores, our growth in this space has evolved into new and exciting directions.
I’m active on LinkedIn if you’d like to learn more, but I wanted this portfolio to share some of the personal, heartfelt experiences that have shaped our catering journey. Updated January 27, 2026
